Musings from happy cooks :o)

Okay, so today we're going to talk about Corn!

Corn is a staple in Mexican cuisine and some might go so far as to say that corn is the "Cornerstone"(hehehe) of Mexican cuisine.  We say here at Alburrito's that Corn is LIFE!! Corn dates all the way back to the Aztec and Mayan civilizations, though it barely resembles the corn that we know today.

FUN FACT: The tamale was considered "sacred" to the Aztec civilization and in some areas of Mexico - it still is!

Today, an up and coming popular food is ELOTE - or simply corn in Spanish.  Elote has come to be known in the Americas as a corn on the cob served with a spicy aioli, fresh herbs, and cheese on it.  Getting it roots in Mexico City - a city that is praised as one of the "most significant places on earth in terms of street food," elote has made it's way to the United States and has been met with open arms, mouths, and hearts coming out of food trucks on the West Coast and beyond!!!

We are currently offering our own version of ELOTE!
Come and give it a try.
